Spring has set in! It's time to taste some weed!

Spring is the time of green leaves. But I don't mean your basil pot or green onions here. Those have been invented for you by the industry. Let's turn to the nature and see what she has to offer in the meadow's superstore:

Leontodon

Its rocket-shaped leaves have detox properties and can be cooked in similar ways to spinach. Catch it soon, especially if you live in a city as it may accumulate pollution with time.

Quick

  1. Rinse the leaves in water to remove impurities.
  2. Bring to boil, strain immediately on a colander and rinse in cold water to keep them green. Drain.
  3. Grind the leaves in a clay mortar (yes we still use them in Poland), or through the holes of a colander or chop them finely.
  4. Melt some butter with a spoon of flour, add the leaves, stir in some sweet cream or milk. Do not boil.
  5. Salt and pepper to taste! Possibly also a pinch of sugar and some lemon juice or a hint of smashed garlic.

Nutritious
  1. Rinse the leaves in water to remove impurities.
  2. Instead of boiling in water, put the leaves in a pan, cover it with a sealed lid (or any other baking vessel with a lid) and leave in an oven set on 100C until soft (about 10min). You will not loose any nutrients in water in this way.
  3. Follow with steps above.
