Leontodon
Its rocket-shaped leaves have detox properties and can be cooked in similar ways to spinach. Catch it soon, especially if you live in a city as it may accumulate pollution with time.
Quick
- Rinse the leaves in water to remove impurities.
- Bring to boil, strain immediately on a colander and rinse in cold water to keep them green. Drain.
- Grind the leaves in a clay mortar (yes we still use them in Poland), or through the holes of a colander or chop them finely.
- Melt some butter with a spoon of flour, add the leaves, stir in some sweet cream or milk. Do not boil.
- Salt and pepper to taste! Possibly also a pinch of sugar and some lemon juice or a hint of smashed garlic.
Nutritious
- Rinse the leaves in water to remove impurities.
- Instead of boiling in water, put the leaves in a pan, cover it with a sealed lid (or any other baking vessel with a lid) and leave in an oven set on 100C until soft (about 10min). You will not loose any nutrients in water in this way.
- Follow with steps above.
